Double-Chocolate Cupcakes Tuesday, October 2, 2012


WIVIK the Frog

1 cup all-purpose flour
1/3 cup unsweetened cocoa
1 tsp baking soda
1/8 tsp salt
2/3 cup sugar
¼ cup butter, softened
½ cup egg substitute
1 tsp vanilla
½ cup buttermilk
1 ¼ oz dark chocolate, finely chopped
2 TBSP powdered sugar


Preheat oven to 350 deg. Combine flour, cocoa, baking soda, and salt; whisk to mix. Place sugar and butter in mixer bowl and beat at medium speed until well combined. Add egg substitute and vanilla, beating well. Add flour mixture and buttermilk alternately to sugar mixture beginning and ending with flour. Fold in chocolate. Spoon batter into 12 muffin cups lined with muffin cup liners. Bake for about 18 minutes or until tests done. Remove from pan and cool completely on a wire rack. Sprinkle with powdered sugar just before serving.
