Chopped Fresh Vegetable Salad Friday, August 9, 2013


1 small zucchini, chopped
1 small yellow squash, chopped
1 bell pepper, chopped
1 large tomato, chopped
1 cup roasted corn kernels, cut from cob
2 pickling cucumbers, chopped
¼ cup extra virgin olive oil
2 TBSP balsamic vinegar
2 TBSP soy sauce
2 TBSP brown sugar
1 tsp salt
½ tsp black pepper
4 to 6 oz crumbled feta cheese (optional)


Toss chopped vegetables to mix. Add oil, vinegar, soy sauce, salt, pepper and brown sugar to a jar with a tight fitting lid. Tighten lid and shake to mix. Pour over vegetables and toss. Sprinkle on feta cheese (if using). Serve immediately.
