Fried Green Tomatoes Wednesday, September 4, 2013


4 green tomatoes, cut into 1/4 inch slices
salt and pepper
2 tsp garlic powder
1 cup all purpose flour
2 large eggs
1/2 cup buttermilk
1 cup panko crumbs
1/2 tsp cayenne pepper
1 tsp paprika
enough oil to come to 1 inch deep in a skillet


In a large skillet, over medium high heat, heat oil to 350 deg. Sprinkle tomatoes on both sides with salt, pepper and garlic powder. In a shallow dishes, make a breading station. Place flour in one dish, beaten eggs and buttermilk in a second, and panko with the cayenne and paprika in a third. Dredge tomatoes first in the flour, the the egg/buttermilk mixture, then into the bread crumbs. Add tomato slices to the hot oil, a few slices at a time, and fry on both sides, about 3-4 minutes. Drain on paper towels, and sprinkle with kosher salt lightly as they come out of the oil.
