2 pounds baking potatoes, washed, peeled and cut into strips
1 TBSP olive oil
1 tsp kosher salt
1 TBSP butter
6-8 gloves garlic, minced
1 TBSP fresh parsley, minced
2-3 TBSP Parmesan cheese


Preheat oven to 450 deg. Toss potatoes with oil, and spread in a single layer on a baking sheet. Sprinkle with kosher salt. Bake for about 25-30 minutes, or until tender and golden brown, turning halfway through. In a large skillet over low heat, melt butter. Add garlic, and cook for about 5 minutes. Add potatoes and parsley to this mixture, tossing well to coat. Sprinkle with parmesan cheese and serve immediately.
