Glazed Meat Loaf Thursday, August 29, 2013


1 ½ lb lean ground beef
1 28 oz can Bush’s Baked Beans (drained, reserve liquid
1 medium onion, diced
1 egg, beaten
1 cup dry bread crumbs
½ cup ketchup
1 TBSP parsley flakes (or 2 TBSP fresh parsley)
2 tsp chili powder


Prepare basting sauce by mixing reserved bean liquid with 1 TBSP ketchup.

Combine drained beans with remaining ingredients. Mix well. Shape into a 9x5x3 inch oaf. Place on a shallow baking dish. Baste meat loaf with 1/3 of sauce. Bake in a 350 deg oven about 1 hour and 15 minutes. About 5 minutes before the meat loaf finishes cooking, pour the remaining basting sauce evenly over it.
