Healthy Zucchini Bread Tuesday, August 28, 2012


1 ¾ cups whole wheat flour
1 cup Splenda
1 ½ oz packet butter buds
1 tsp baking soda
½ tsp nutmeg
½ cup finely chopped nuts (optional)
1 ½ cups tightly packed shredded zucchini
3 egg whites
½ cup unsweetened apple sauce
1 tsp vanilla


Preheat oven to 350 deg. Spray a 9x5 inch loaf pan with butter flavored cooking spray. Combine flour, Splenda, Butter Buds, soda and nutmeg. Stir in walnuts and zucchini. Beat together egg whites, apple sauce and vanilla. Add to dry mixture and blend well. Pour batter into prepared loaf pan. Bake for 50 to 60 minutes or until it tests done.
