Ingredients

1 pkg Lemon gelatin
2 cup hot water
1 cup cold water
1 cup celery, chopped
2 red skinned apples, cored and chopped
½ cup walnuts
¼ cup sweet pickle relish
½ cup reduced fat mayo

Directions

Dissolve gelatin in hot water. Stir in cold water. Slowly whisk gelatin mixture into mayo. Blend completely. Chill until slightly thickened. Stir several times during the chilling process. Combine celery, apple, walnuts and pickle relish. Stir into gelatin mixture. Pour into a ring mold which has been lightly sprayed with cooking oil spray. Chill until firm. Unmold onto greens.
