Peanut and Tomato Stew March 8, 2013


1 TBSP vegetable oil
1 small onion, finely chopped
1/2 small red onion, chopped
6 cloves garlic, chopped
2 green bell peppersw
2 14 oz can diced tomatoes
1/3 cup crushed peanuts
1 1/2 cups vegetable stock
salt and pepper to taste
ground cayenne pepper to taste


Heat oil in a medium saucepan over medium heat. Saute white and red onion, garlic, bell pepper, and peanuts for 2 to 3 minutes. Stir in tomatoes, stock, salt, black pepper and cayenne pepper: bring to a boil. Reduce heat to low and simmer at least 30 minutes. Simmering for 1 1/2 hours is fine.
