Pumpkin Sweet Bread (made with Butternut Squash) Friday, October 12, 2012


1 cup butternut squash puree
2 eggs
1 cup sugar
1/3 cup cooking oil
1 cup buttermilk
2 cups flour
1 tsp baking soda
2 tsp baking powder
½ tsp salt
1 tsp vanilla


Mix the sugar and the oil completely. Add the eggs one at a time and continue to beat. Stir in the squash. Mix the dry ingredients together. Add the milk and the dry ingredients alternately to the squash mixture. Beat well. Stir in the vanilla. Pour into a 9x5x3 inch loaf pan which has been sprayed with baking spray. Bake in a 350 deg oven for 45 minutes or until brown and firm to the touch.
