Real Pimento Cheese Monday, July 29, 2013
A David Lambert Sr. Recipe
2 lbs Velveeta (or Velveeta style) cheese (I use cheesy Does It)
2 cup sharp cheddar cheese, shredded
2 4.0 oz jars diced pimento, undrained
3 to 4 heaping TBSP mayonnaise or enough to reach desired consistency
Allow cheese to come to room temperature. Mix cheese in a heavy mixer using the flat blade. Stir in mayonnaise to blend. Add pimento and continue to blend until it is evenly mixed. Add additional mayonnaise if necessary to achieve desired consistency. Can be used immediately, but achieves full flavor after it has chilled in a tightly closed container.
