Romaine Salad with Feta Vinaigrette Monday, October 15, 2012
4 hearts of Romaine lettuce
1/4 cup olive oil
2 TBSP lemon juice
1 TBSP red wine vinegar
3 ounces feta cheese, crumbled, divided
2 TBSP water
1 tsp oregano
1 clove garlic, minced
1/4 tsp salt
1/4 tsp black pepper
1. Cut Romaine hearts in half, and arrange on serving platter.
2. In a small jar, combine olive oil, lemon juice, red wine vinegar, 2 ounces feta, water, oregano, garlic salt and pepper. Cover jar and shake until fully combined.
3. Drizzle dressing over lettuce hearts. Sprinkle with black pepper, and top with remaining feta cheese.
