Slow Cooker Corned Beef Thursday, September 27, 2012


4 carrots, peeled and cut into sticks
10 baby red potatoes, scrubbed and cut into quarters
1 onion, peeled and cut into bite-sized pieces
4 cups water
2 tablespoons pickling spice
1 4-5 corned beef brisket
1/2 bottle of beer, Guinness if you have it
1 small head cabbage, cored and coarsely chopped


In the bottom of a slow cooker, place the vegetables, and sprinkling with the pickling spice. Add the brisket, and cover with beer, and just enough water to cover. Set cooker on low. Allow the brisket to cook for about 8 hours. Turn cooker to high, and add the cabbage; cook an additional hour. Serve with parsley or mustard sauce.
