Stove Top Baked Beans Monday, September 3, 2012


1 lb (about 3 cups) Great Northern Beans
2 TBSP canola oil
1 medium onion, chopped
2 cloves garlic, minced
1 15 oz can diced tomatoes, drained
2 TBSP yellow mustard
1/2 cup brown sugar (or molasses)
salt and pepper to taste


Soak and cook the beans according to pkg directions. In the meanwhile, heat the oil in a heavy skillet. Add onions and cook on medium heat about 5 minutes or until they start to brown. Add garlic and cook an additional minute. Stir in tomatoes, mustard and brown sugar. When the beans are cooked until they are tender, stir in the onion/tomato mixture. Cook, uncovered, until the juices are reduced and the beans are thick. Serve warm.
