Tabouli salad Wednesday, March 20, 2013


1 quart cooked orzo pasta
1 cup diced tomato
11/2 diced cucumber
2 TBSP finely chopped mint
1/2 cup chopped parsley
2 Oz fresh zesty dressing
1 tsp salt
1 TBSP fresh lemon juice

To serve and garnish:
4 oz spring salad mix
1/2 oz crumpled feta cheese
Kalamata olives and cherry tomatoes for garnish.


Combine all ingredients except greens, feta, Kalamata olives and cherry tomatoes in a stainless steel bowl and combine. Plate over mixed greens and garnish with feta, olives and cherry tomatoes:
