Tangy Squash Marinate - Wednesday, August 8, 2012


5 medium yellow squash, thinly sliced
½ cup bell pepper, thinly sliced
½ cup celery, medium sliced
2 TBSP wine vinegar
½ cups sugar (or more to taste)
1 tsp salt
½ tsp pepper
2/3 cup cider vinegar
1/3 cup salad oil (extra virgin olive oil is very good for this)


Toss chopped veggies. Stir all liquids and seasoning together and pour over veggies. Chill to marinate for 10 to 12 hours. Toss a couple of times during this period to assure everything being coated with the marinade. Drain to serve.
