6 Russet potatoes, sliced
2 onions, chopped
¼ cup Parmesan cheese, grated
1 cup Cheddar cheese, grated
1 cup mozzarella cheese, grated
4 ounces bacon, diced and crisped
¼ cup butter, cubed
2 tsp kosher salt
1 tsp garlic powder
1 tsp black pepper
Lay out two sheets of heavy aluminum foil, and spray with cooking spray. Divide the potatoes and onions evenly between the two sheets. Sprinkle potatoes and onions with salt, pepper and garlic powder.
Sprinkle half of the cheeses evenly over the potatoes and onions. Top with bacon and butter. Seal the foil into packets, making sure to crimp foil tightly.
Place on a medium hot grill for about 40-45 minutes or until potatoes are tender. Remove from the grill, carefully open packets, and sprinkle remaining cheese over the top.
Alternately you can bake in a 350F oven for about an hour.
