Biscuits with Ham and Cheese
A Linda Carman Recipe

3 cups self rising flour
1 ½ to 1 3/4 cups milk
1/3 cup canola oil
1 cup chopped country ham, cooked
1 cup cheddar cheese, grated

Secret Biscuits

2 cups White Lily self-rising flour
1/3 canola oil
2/3 milk approx

Cornmeal Sawmill Gravy

1 lb country sausage (hot or mild)
1/4 cup corn meal mix, rounded
4 cups milk
salt and pepper to taste


Biscuits with Ham and Cheese

Mix the flour, milk, and cooking oil to make a batter that will just hold its shape. Stir in cheese and country ham. Drop by teaspoonfuls onto a lightly greased baking sheet. Bake at 400 deg until brown (about 12 to 15 minutes). Serve hot.

Secret Biscuits

Stir oil into flour. Add enough milk to make a soft dough. Knead two or three turns on a floured surface. Cut into biscuits and bake at 400 deg until brown.

Cornmeal Sawmill Gravy

Fry the sausage, crumbling while frying. Stir in cornmeal mix and cook about 1 minute, stirring constantly. Add milk and cook, stirring constantly until mixture boils and thickens. This will take 3 or 4 minutes after the mixture reaches a full boil. Serve over hot biscuits.
