Working Man’s Bean Soup Monday, September 1, 2014

Ingredients

1 1 lb bag mixed bean soup mix
1 medium onion, chopped
1 bell pepper, chopped
2 TBSP vegetable oil
1 cup salsa (mild or hot, you choose)
salt to taste

Directions

Soak the beans as directed on the bag. In a large pot, saute the onion and bell pepper in the oil. Drain the soaking water and add beans to the pot with 5 or 6 cups of water. Bring to a boil and reduce heat to a simmer. Stir occasionally. After about 1 hour, add salsa and stir to mix. Allow to continue to simmer until beans are tender and juices are thick. Serve hot with some good cornbread.
