Ingredients
2 8 oz pkgs cream cheese
3 cups shredded zucchini
1/4 cup pimento-stuffed olives, chopped
1 (4 1/4 oz) can ripe olives, chopped
6 or 8 garlic cloves, minced (or to taste)
3 TBSP chopped red onion
2 TBSP minced fresh cilantro
2 TBSP lime juice
2 TBSP olive oil
Directions
Combine all ingredients in a large bowl and mix until smooth. Cover with plastic wrap or foil and refrigerate for at least 4 hours. Serve with baguette slices, party sliced bread or vegetables as a dip and spread.
