Knoxville, Tenn. ((WVLT)) -- Cowboy Chuck Wagon Cook Off
On Saturday, Feb. 22, visitors to Pigeon Forge will have the opportunity to get a taste of the Old West at the Saddle Up Chuck Wagon Cookoff and Lunch. The cookoff and lunch, sponsored by the Pigeon Forge Hospitality Association, are part of Saddle Up, a five-day celebration of the American West, Feb. 19-23.

Green Chile Chipotle Relish with Cream Cheese
Prep Time: 5 minutes
Total Time: 1 hour and 15 minutes
Makes approximately 3 ½ cups
1 (7 ounce) can chipotle peppers in adobo sauce
1 (10 ounce) can Ro-Tel tomatoes and diced green chilies
1 (4 ounce) can green chilies
1 cup sugar
1 (8 ounce) block cream cheese
1. Remove the chipotle peppers from the can and dice.
2. In a medium saucepan, combine the chipotle peppers with adobo sauce with the Ro-Tel, green chilies and sugar. Cook over medium heat for about 10 minutes, stirring frequently, until sauce thickens slightly and is warmed through.
3. Remove from the heat and scrape the mixture into a small bowl, cover and place in the icebox for 1 hour or until chilled.
4. Pour the relish over the block of cream cheese and serve with crackers.
Tip: For a less intense heat, lightly rinse the chipotle peppers before combining them in the dish.
