KNOXVILLE, Tenn. On National Taco Day morning anchor Marco Villarreal decided he should make some breakfast tacos for the gang and show you how easily chorizo with egg tacos can be made.
The recipe is simple. You just need to have chorizo, a Mexican sausage, and eggs. The chorizo can be found in the Latin section of some meat departments at local groceries. They can also be found at local Mercaditos, or latin stores. No oil is necessary in the pan since the chorizo will release grease when cooked. Seasoning is not necessary since it also has plenty in the meat.
Make sure you squeeze the meat out of the covering in the link before cooking. Cook the meat, then add the desired amount of eggs, scramble, and then serve on warm flour or corn tortillas. Garnish to your liking and enjoy!
