Are you ever too Busy to cook breakfast? Especially with the kids going back to school, your morning routine can be tough. Here's a few options to get you out the door without even having to cook every morning.
These are options you can make in advance, and even freeze to keep ready to go.
Pinspiration: Breakfast Muffins
What you need:
- toppings of your choice (think of your favorite omelet toppings)
- dash of milk (make your eggs a little fluffier)
- Great combinations (Mushrooms, spinach, peppers, tomato, bacon, or sausage)
Use a muffin pan and pour contents in each section, about 3/4 full. Bake at 350 degrees for 20 to 30 minutes.
Pinspiration: Breakfast Burritos
What you need:
- Dozen eggs
- Dozen tortillas
- 1 onion
- 1 pepper
- Garlic clove
- Turkey sausage
- Cheese (optional)
Cook onion & peppers in oil & garlic, add turkey sausage, then add eggs (with salt pepper & cumin), Mix in cheese (again optional)
Once cooked, put mixture in tortilla, roll into burrito, add plastic wrap, then aluminum foil. Place in freezer bag & write date on bag.
Will last up to 3 months
