Knoxville Memory Walk for Alzheimer's Disease

KNOXVILLE, Tenn. (WVLT)-- Help us raise money for the Knoxville Memory Walk for Alzheimer's Disease!

We had Chef John Luna here this morning who made "Brain Healthy Brownies" which will be served at the walk. The recipe is as follows:

Brain Healthy Brownies
1 cup Cocoa Powder
1 cup (2 sticks) Butter
4 cups Sugar
2 cups Pureed (Canned) Black Beans
8 eggs
1 1/2 cups Flour
1 Tsp. Salt
1 1/2 Tsp. Baking Powder

In a bowl, mix sugar, cocoa, butter, beans and eggs. In separate bowl, combine flour, salt, and baking powder. Add wet mixture to dry. Stir to combine. Pour in greased pan. Bake at 350 degrees for 25 minutes or until done.

Here are some facts about black beans and why they are healthy for the brain.
1. High in soluble fiber (keeps insulin levels low. Keeps you fuller and you helps to store less fat.)
2. High in iron and protein
3. High in Omega 3 Fatty Acids
4. Low in cholesterol (Reduces plaque formation in the arteries)
5. Cocoa has flavonoids which increases blood flow to the brain along with beans keeping plaque down and that lowers dementia and stroke possibilities.
6. Beans replace some of the "animal fat" and overall fat which decreases blockages to the heart and the brain.

Remember the walk is this Saturday, April 2nd at Knoxville's 2nd Presbyterian Church. Registration starts at 9:00 a.m.

There will be free food, tricycle races, pet contest and of course the 1.5 mile walk along the 3rd Creek Greenway. Also, there's a "Fun Walk" which is around the church's parking lot.
