KNOXVILLE, Tenn. (WVLT)-- Tis' the season for eating lighter and believe it or not, Big Fatty's is even getting lean.
Smaller portions and lighter fare items will now be on the menu at Big Fatty's, a local restaurant in the area.
Lisa Wolf, owner and head chef joined us this morning with a sample of one of her new items, lettuce wraps.
Turkey Lettuce Wraps
6 oz. Ground Turkey
1/4 Head of Iceberg Lettuce
1/2 cup Feta Cheese
1/2 Apple, cut thinly with skin
1 Tsp. Olive Oil
2 Tbsp. Balsamic Vinegar
1 Tbsp. Fresh Cut Cilantro
1/2 Tsp. Honey
In saute pan cook turkey burger for 3-4 minutes on each side on medium heat. Dice burger and add feta cheese and turn off heat, cheese will melt.
Meanwhile, prep your iceberg lettuce and leave leaves whole. Combine tomato, apple, balsamic vinegar, oil and cilantro in a bowl.
Place turkey and feta mixture in the lettuce. Top with apple and tomato dressing and finish with honey.
